One Ridgehauler per campaign is enough!
While the Ridgehauler is the focus of several scenarios in an ash wastes campaign, your group only needs one. And if someone in your group can scratch build one, that's even better! But the truth is that while the idea of two Ridgehaulers racing through the wastes sounds amazing and cinematic, it's actually very dull. Your group will have far more fun if gangs are attacking/defending one that is the focus of that game.
