My go to undead flesh tone when mixed with a bit of AP Angel Green followed by a dark wash.
I use the Army Painter Banshee Brown mixed with a bit of AP Angel Green (ironically) followed by a dark wash, for that just a bit off corpse appeal. I'll brush up exposed bone with the Skeleton Bone (not ironically) for the contrast of decaying flesh peeling off of the bone.

Army Painter is a solid choice
I really like Army Painter paints. They have good consistency and coverage, can be thinned down for use in airbrushes, and the colors I typically use are good matches for historically accurate models
